What’s better than plain mac ’n’ cheese? Mac ’n’ cheese with kale and chorizo! Our chefs took this classic dish to the next level by adding in vitamin-rich leafy greens and cubes of spiced sausage. It’s even finished under the broiler to add some crispiness on top and make the cheddar and mozzarella cheeses bubble.

Wash and dry all produce. Preheat broiler to high. Bring a medium pot of salted water to a boil. Remove stems and large ribs from kale; chop or tear leaves into 1-inch pieces. Halve, peel, and finely dice onion. Mince 1 clove garlic. Cut chorizo into ¼-inch cubes.
Once water boils, add pasta to pot. Cook, stirring occasionally, until al dente, 9-11 minutes. Reserve ½ cup pasta cooking water, then drain.
Heat 1 TBSP oil in a large pan over medium-high heat (use an ovenproof pan if you have one). Add garlic and cook until fragrant, about 30 seconds. Add kale and cook, tossing, until just softened, about 2 minutes. Pour in 2 TBSP water, then toss until tender, about 2 minutes. Season with salt and pepper. Remove from pan and set aside.
Lower heat under pan to medium and add chorizo. Cook, tossing, until beginning to crisp, about 5 minutes. Remove from pan with a slotted spoon and set aside with kale, leaving oil in pan. Add 1 TBSP butter and onion to same pan. Cook, tossing, until onion is softened, about 3 minutes. Whisk flour into pan and cook, stirring, for 1 minute. Slowly whisk in milk, a little bit at a time, until fully incorporated. Bring to a boil and cook until thickened, about 30 seconds.
Remove pan from heat and stir in cheddar and mozzarella. Season with salt and pepper. Add pasta, kale, chorizo, and reserved pasta cooking water to pan and stir until thoroughly combined. TIP: If your pan If your pan isn’t ovenproof, transfer everything to a small, buttered baking dish.
Place pan or dish under flame and broil until lightly browned and bubbly, 3-5 minutes. Divide broiled pasta between plates and serve.
