• Wash and dry all produce. • Zest and quarter lime. Core, deseed, and dice bell pepper into ½-inch pieces. Finely chop cilantro. • In a small bowl, combine chili sauce, sweet soy glaze, ¼ cup water, 1 tsp cornstarch (we sent more), ½ tsp sugar, and a squeeze of lime juice to taste. (For 4 servings, use 1⁄3 cup water, 2 tsp cornstarch, and 1 tsp sugar.)
• Heat a large drizzle of oil in a large pan over medium-high heat. Add bell pepper; season with salt and pepper. Cook, stirring, until slightly tender, 3-4 minutes. • Add pork* and cook, breaking up meat into pieces, until browned and cooked through, 4-6 minutes. Season with salt and pepper. • Stir in sweet chili glaze; cook, stirring, until pork is coated, 30-60 seconds more.
• Meanwhile, gently massage rice in package to break up grains. Partially open package; place 1 TBSP butter inside. (For 4 servings, use 1 TBSP butter per package.) Microwave according to package instructions, 90 seconds. • Carefully open package fully; season rice with salt and pepper. Transfer to a medium bowl and add half the cilantro and lime zest to taste. Fluff with a fork.
• Divide rice between bowls and top with pork and pepper mixture and remaining cilantro. Serve with any remaining lime wedges on the side.
