Adjust racks to top and middle positions and preheat oven to 425 degrees. Set aside 4-5 TBSP garlic herb butter to soften. Divide carrots between two baking sheets; toss with a large drizzle of olive oil and season with salt and pepper. Roast on top and middle racks until tender and lightly browned at the edges, 20-25 minutes. Carefully toss with hot honey and softened garlic herb butter.
