• Adjust rack to top position and preheat oven to 425 degrees. Wash and dry produce. • Cut potatoes into 1⁄2-inch-thick wedges.
• Toss potatoes on a baking sheet with a large drizzle of oil, salt, and pepper. Roast on top rack until browned and tender, 20-25 minutes.
• Meanwhile, thinly slice tomato into rounds; season with salt and pepper. Trim and discard root end from lettuce; cut into bite-size pieces.
• Place mayonnaise and half the dressing in separate serving vessels. Present family style along with sourdough, turkey, cheddar, and tomato for everyone to build their own sandwiches.
• Heat a large drizzle of olive oil in a large pan over medium heat. Carefully add sandwiches (for 4 servings, work in batches; wipe out pan between batches and add more oil as needed). Cook, gently pressing with a spatula or heavy-bottomed pan, until cheese melts and bread is golden, 2-4 minutes per side, adding another drizzle of olive oil when flipping. TIP: Lower heat and cover with lid if sandwiches begin to brown too quickly.
• In a large bowl, toss lettuce with remaining dressing.
• Divide turkey melts between plates. Serve with potato wedges and salad on the side. TIP: Fill your sandwich with some salad for added crunch!
