Heat a large, dry pan over medium-high heat. If using, add bacon; cook until crispy, 6-10 minutes. Turn off heat and transfer to a paper-towel-lined plate.
Spread sourdough with garlic herb butter; place buttered-sides up on a clean work surface. Evenly top half the slices with 3-4 slices of cheddar and cooked bacon. Close with remaining bread, buttered sides down.
Heat a drizzle of oil in same pan over medium heat. Add sandwiches and cook until bread is golden and cheese melts, 2-3 minutes per side. (You may need to work in batches.)
