Adjust rack to middle position and preheat oven to 425 degrees. Bring pie crusts to room temperature.
Rip or cut prosciutto into nine pieces. In a large bowl, combine tomato paste, marinara, and half the mozzarella. Lightly season with salt and pepper; stir to combine.
Unroll pie crusts onto a clean, lightly floured surface. Cut crusts to create two 8-by-8-inch squares (discard any extra trimmings). Cut each large square into nine small even squares (you should have 18 pieces total).
Transfer half the squares to a baking sheet; place about 2 inches apart. To center of each square, add 1 TBSP filling and one piece prosciutto, leaving a ½-inch border around edges. Using a brush or your fingers, lightly brush edges with water. TIP: Fill a small bowl with water and keep it next to you for easy access. Top with remaining squares. Using a fork to press around dough edges to seal. Brush tops with a drizzle of oil and sprinkle with remaining mozzarella.
Bake on middle rack until golden brown, 12-15 minutes. Let cool 5-10 minutes, then serve.
