What’s better than cooking Dad a burger for his special day? Making him one that’s juicy, charred, and stuffed with melty cheese! Our Father's Day edition burgers are stuffed with an Italian cheese blend, grilled up just right, and loaded onto toasted brioche buns spread with pesto aioli. We recommend grilling your burgers for the perfect oozy cheese, but cooking on the stovetop will also do the trick!

Combine pesto and mayonnaise in a small bowl. Halve buns. Form beef into two ½-inch-thick rounds; season lightly with salt and pepper. Divide half the cheese between each patty; gently fold meat around cheese to create cheese-stuffed patties, each slightly wider than a bun. Season with salt and pepper.
Heat a well-oiled grill to medium high, or heat a drizzle of oil in a grill pan or large pan over medium-high heat. Cook burgers to desired doneness (we suggest 3-5 minutes per side, but grills can vary). In the last 2 minutes of cooking, top patties with remaining cheese; cook until cheese melts. Add buns; toast until bread is golden. Spread tops of toasted buns with pesto aioli. Fill buns with burgers and serve.
