Pepper
Set aside 2 TBSP garlic herb butter to soften to room temperature.
Adjust rack to top position and preheat oven to 425 degrees.
Toss carrots on a baking sheet with a drizzle of oil, salt, and pepper.
Roast carrots on top rack 18-22 minutes, or until softened.
Remove baking sheet from oven. Toss carrots with softened garlic herb butter and hot honey to taste.
