Halve, core, and thinly slice apples. TIP: To keep your apples from turning brown, toss them with 1 tsp lemon juice after slicing. Melt 1 TBSP butter in a small pan over medium-high heat. Add pecans, coconut, and a pinch of salt; toast, stirring occasionally, until golden, 2-3 minutes. Set aside to cool.

Toast waffles until golden brown. Cut into 1-inch wide strips.

Cut 6 TBSP butter into ¾-inch cubes. Place in a large microwave-safe bowl and cover with plastic wrap. Microwave until melted, 60-90 seconds. Carefully uncover and whisk in brown sugar (break up any large clumps in the package first!), maple syrup, and 2 TBSP white sugar until sugar is dissolved.

Cover bowl with caramel sauce with plastic wrap. Microwave until mixture begins to bubble, 2 minutes. Carefully whisk for 30 seconds (mixture will be hot!). Microwave, uncovered, until mixture is bubbly throughout, 60 seconds more (keep an eye on the bowl—microwave temperatures vary). Carefully whisk for 30 seconds more.

Add crème fraîche to bowl with caramel sauce and whisk until combined. Lightly season with salt, then stir. (Mixture may appear thin at first, but will begin to thicken as it cools slightly.)

Arrange apple slices and waffle strips on a board or serving platter. Place caramel sauce, jam, chocolate chips, and toasted pecans and coconut in separate serving bowls, and serve alongside for dipping and sprinkling.
